I developed a big time crush on mangoes during my honeymoon in Nicaragua. But because I’m in my thirties now, and not a terrified teen, I just walked up and said, “hey girl, we should hang out.” Things didn’t work out like Audre Lorde and avocados but we’re still friends, and I have so much admiration for these lovely fruits. Make this fresh mango salsa and behold the succulent goddesses of the fruit world. A little chopping and mixing gets you a batch of homemade mango salsa in no time. This recipes combines sweet, salty, and spicy in each delicious bite. Mangoes get it done – juicy stone fruit (check!), high-fiber fruit (check!), high-antioxidant fruit (check!).
Fresh mango salsa is an easy way to shake up snacks and breathe new life into timeworn recipes. You can literally add this to anything and everything: chips and salsa, gallo pinto, burritos, or use it as a salad topping or a standalone salad. What about quesadillas? Go bravely into the night with this powerful fruit flavor punch. Not a fan of spicy food? Neither is my mother-in-law, so she uses a tiny pinch of jalapeño rather than the full thing. Everybody needs more fruit in their lives. So, go on, be bold and say heyyyyy to the fruit.
