Thanksgiving is approaching quickly. When you’re vegan, or even vegetarian for that matter, you have to think through a meal that centers around a semi-giant mean* bird (*my sister was chased by a turkey at a very young age so I have a small grudge). A lot of traditional Thanksgiving meals have plenty of salt and fat in them but they lack the acidity and spice to really make the meal memorable. Luckily, when you’re vegan or vegetarian, you’re already breaking rule number one (#1 rule = focus on the bird!) so free the bird and focus on the flavors instead. Let’s do this, vegan Thanksgiving style!
